All under Settings.
The five measures — participation, joy, interest, understanding, difficulty — are fixed and always there; since 4.0 none of them can be switched off. The scales are optional anyway.
Shake to undo
Off until you switch it on. After that, a shake takes back the last deletion while the bar is showing. iOS asks once for permission to use motion data; if you decline, the button in the bar remains the way back.
Language
Device language follows your iOS setting. A fixed choice (Deutsch or English) stays in place even if you change the device.
Sample data is created in whichever language applies at the time. If you switch afterwards, the titles stay in the old language.
Appearance
Like the device (the default) follows the device’s light or dark mode – even when it switches by itself in the evening. Light or Dark stay fixed, whatever the device shows. The choice applies per device.
Up to 6.9.2 there was a button at the top right for this. It fixed the choice for good, with no way back; so after the update to 6.9.3 the app is set to Like the device once.
Introduction
The seven-page introduction from first launch, available again at any time. Opened from the settings, it takes you back there at the end.

Open the user manual brings up this manual in your browser – in English or German, depending on the app's language. At the very bottom you also find feedback, the privacy policy and the legal notice.
